Fun Easter “Peep” Cake

I Peep Cakehope you and your family are having an amazing Easter!!! I just had to share my creative “peep” cake that I brought to our family gathering today. It took a lot of food dye, but it was amazing!

I made a standard funfetti cake, that I died brown to be my dirt, layered green icing and sweetened coconut flakes dyed green for my “grass” and topped with reese’s pieces eggs and a variety of peeps! A fun garden scene the kids loved!

I hope you were able to spend time with love ones and whip up some yummy dishes!

Zucchini “Noodles” with Homemade Pesto

Zucchini Noodles with Pesto

So I am absolutely obsessed with my spirazlier! It is such an easy and fun way to feel like I am getting that pasta taste

You could also do squash, or sweet potato “noodles,” but i feel for this specific combo that the pesto and zucchini work well together!and feel for a fraction of the calories! I have used this recipe over and over again for lunches and dinners.

Spinach and Gouda Quiche

This is definitely my new favorite recipe! If you’d prefer to make your own crust for something a bit flakier go ahead, however I find buying the pre-made refrigerater section crusts saves time!

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup thinly sliced green onions
  • 1 clove garlic
  • 3 cups fresh baby spinach
  • 1 cup low-fat milk
  • 4 oz grated smoke gouda cheese
  • 3/4 teaspoon salt
  • Dash of grated nutmeg
  • 3 large eggs

Instructions

  1. Cook crust per baking instructions until lightly browned (usually about 20-25 minutes at 350 degrees).
  2. While crust is cooking prepare filling by first sauteing oil, garlic and onions until tender.
  3. Add spinach; sauté 2 minutes.
  4. Combine 1 cup milk and remaining ingredients in a bowl; stir well with a whisk.
  5. Stir in spinach mixture.
  6. Pour filling into crust. Bake at 350° for 35 minutes.
Quick Notes

I like the creamy, custardy consistency of this quiche when it’s baked for 35 minutes. If you prefer a firmer texture, bake an additional 5 minutes.

Decorating My New Kitchen

The past few months have been a blur of unpacking, painting and constant decisions and purchases, but I am finally getting to do more of the small details that really make a house a home!Rustic Burlap Frame

One of the touches that was really important to me was integrating my family into my kitchen. I had my husband put up some shelves in the kitchen, and I added some of my family’s handwritten recipe cards with a little burlap ribbon and some cute rustic frames from AC Moore.

Pictured over to the right is my Great Aunt Theresa’s “famous” Garlic Cheese Spread, which is a must at any family gathering! It is not only a great decoration piece but also puts a smile on my face every time I walk by!

I have also included my mother-in-laws Corn Pudding, my grandmother’s pecan pie and my Mom’s pound cake! What an easy and fun way to decorate and make your kitchen just a little more homely!

Pumpkin Peanut Butter Puppy Treats!

Pumpkin Peanut Butter Dog TreatsIf you follow me on instagram you know how much I love my pups! All three of my rescue dogs seem to do best on a fairly natural diet and on treats that don’t have a lot of preservatives or other unnatural ingredients.

These treats were fairly easy, and I was able to use my fun Virginia shaped cookie cutter! While homemade treats will not last as long as store bought treats in most occasions, I was able to store these for weeks in a ziplock bag, and they went pretty fast with three pooches around!

Icebox Strawberry Cheesecake

IMG_8706

After reading through one of my many food magazines, the husband requested an icebox cheesecake for dinner last night. This particular recipe is on the healthier side, using greek yogurt and low fat cream cheese, and was a hit for a sweet after dinner treat.

I recommend letting this set as long as possible to make slicing the pie easier, and only add the strawberry mixture right before you are going to serve. You can put the strawberries around the outside of the pie as pictured, or cover the entire thing! Either way ,delicious!

Comfort RVA’s Famous Pimento Cheese

804orkAfter my earlier post of Fried Green Tomatoes, I knew I owed y’all a kick ass pimento cheese recipe, and luckily I was inspired. My very chic and fun best friend Sweet Caroline got me the perfect foodie gift – the new “804ork” cookbook (check out her blog for all things amazing and RVA).  This book, you can buy here, features some of Richmond, Virginia’s most talented chefs and their recipes. This includes well known Richmond dishes, such as my favorite Comfort’s Pimento Cheese.

The roasted red peppers and tarragon really add a tasty twist on the traditional pimento cheese I have come to know and love. This is excellent on Comfort’s signature Ritz Crackers, or sandwiches, fried green tomatoes and burgers.

Jamaican Jerk Chicken Quesadillas – Saucy Mama Competition

IMG_8381As you probably read in my previous post, Orange Habanero Pork Carnitas Flatbread, I am in the 2014 Saucy Mama Recipe Contest, and after making two delicious entry options I can’t decide what to submit! This is recipe concept #2, so after checking it out, leave a comment, write on my Facebook Page, or Tweet me with your preferred appetizer recipe!

These Jamaican Jerk Chicken Quesadillas have an amazing sweet tang, brought about by the Saucy Mama Jamaican Jerk Wing Sauce. As you can see I chose to fill my quesadillas with a lot of extra vegetables and flavor, and you can easily substitute more seasonal vegetables like summer squash, or even a different cheese if you so desire.

Remember to let me know which recipe concept you like better so I can submit my idea to the competition by May 14th! Continue reading “Jamaican Jerk Chicken Quesadillas – Saucy Mama Competition”
