Comfort RVA’s Famous Pimento Cheese

804orkAfter my earlier post of Fried Green Tomatoes, I knew I owed y’all a kick ass pimento cheese recipe, and luckily I was inspired. My very chic and fun best friend Sweet Caroline got me the perfect foodie gift – the new “804ork” cookbook (check out her blog for all things amazing and RVA).  This book, you can buy here, features some of Richmond, Virginia’s most talented chefs and their recipes. This includes well known Richmond dishes, such as my favorite Comfort’s Pimento Cheese.

The roasted red peppers and tarragon really add a tasty twist on the traditional pimento cheese I have come to know and love. This is excellent on Comfort’s signature Ritz Crackers, or sandwiches, fried green tomatoes and burgers.

IngredientsPimento Cheese Recipe

  • 1 1/2 lb. sharp cheddar cheese, grated
  • 2 medium red bell peppers, roasted, peeled, seeded and finely diced
  • 1 small shallot minced
  • 2 springs tarragon, leaves removed , minced
  • 1 1/4 cup mayonnaise (Duke’s is suggested)
  • 2 dashes Worcestershire sauce
  • 1 dash hot pepper sauce
  • 1 tsp black pepper

Directions

  1. Combine all ingredients in a large mixing bowl until well-blended.
  2. Cover and refrigerate for at least 2 hours or up to one day.
  3. Serve with crackers, pickles, and crudités.
