Orange Habanero Pork Carnitas Flatbread – Saucy Mama Competition

IMG_8451As you have probably seen on social media I am competing in this round of Saucy Mama’s Recipe Competition! They sent me a blogger pack of 6 Wing/Marinading Sauces and we are to use one in a recipe fitting their contest’s rules! I can’t decide on which recipe to submit so I need your help!!!

This is recipe concept #1! Concept #2 can be found here! I used a slower cooker to cook the pork shoulder overnight, added the yummy Saucy Mama Orange Habanero Wing Sauce, made my own flatbread and what ensued was a delicious appetizer for any gathering! You can easily add more or less sauce depending on your desire for heat, and this wing sauce has the perfect balance of the orange sweetness with spicy habanero!

I made my own flatbread, infusing some chopped cilantro into the crust, but you can easily use your favorite pizza dough recipe or prepared crust from the store to save time! Homemade Fried Green Tomatoes with Pimento Cheese

Fried Green Tomato

As any good southerner could attest, a perfectly fried green tomato topped with pimento cheese is a flawless addition to any meal. The secret to these homemade tomaters is self-rising cornmeal and an even thick cut slice! I added a bit of tabasco to these, to give them a kick, but feel free to leave that out, or substitute with a bit extra of the creole seasoning.

For this appetizer I cheated a bit and used a friends already prepared pimento cheese! It was homemade, just not by me! Looks like I have an idea for one of my next recipes to try out!

Crunchy Roast Beef and Havarti Parker House Rolls

I love finding new and exciting sandwich options that surprise my husband. When I took these out of the oven, he thought all I had prepared for dinner was a pan of rolls and a side salad.

Once I popped out these mini beef parker house rolls, he was floored, and loved the unique taste and combination. The remainder definitely ended up in his lunch the next day!

Mix it up Monday! Spring Dress Round-Up

As we finally transition from this cold weather into spring I had to share my 4 must have Spring dresses! Several of these are staple pieces you will no doubt wear for years, but I also threw in some fun and flirty options to help you round out your spring wardrobe, but also transition into summer and wedding season! Designers seem to be breaking out the bright colors

While the red dress makes a statement, for a staple wardrobe piece I would go with the Navy. This is a staple wardrobe piece that you can easily mix with a blazer and heels for work or with flip flops for a fun day out! A great transitional piece where the shoes and jewelry you pick will really make a difference!

AnthroSheath2) Anthropologie  Aures Sheath Dress$168

This dress is flattering, elegant but fun and another great purchase for a good dress up or dress down option. The contrasting prints look amazing together and the cut of the dress is extremely flattering. I was pleasantly surprised to find that the fabric is much lighter than I expected and had some give so that it comfortable to move around.

Maddie Electric Embossed Dress - Hot pink3) I.MADELINE Maddie Electric Embossed Dress – $89

Bright colors are really in this Spring, and this ‘electric’ pink is the perfect find. You could easily wear this to an outdoor wedding, or just out with your friends. This dress is flattering, has a great embossed print and appropriate length.

After seeing a friend in this dress at a shower last week, I knew I had this to my Spring Dress Round-Up. The colors are vibrant and gorgeous and look amazing on any skin tone. The vibrant print +the excellent fit + the weight of the fabric + the little details = the perfect summer shift.

Vegetable Spring Rolls

IMG_7996In keeping with my theme of Asian inspired dishes, I had to share my most recent party dish, fried vegetable spring rolls. These were a huge hit, and the perfect finger food for a crowd. I used small wonton wrappers, but you could easily use larger egg roll wrappers to make a larger, dinner sized portion for your family dinner during the week!

You can easily substitute other preferred vegetables, like mushrooms into this dish, however this is what I picked up at the store and the outcome was delicious! I have also done a variety with pork and shrimp, but this was vegetarian friendly!

Homemade Crab Rangoon

IMG_8104My absolute favorite part of any Chinese dinning experience is the crab rangoon. Some of you may refer to these as crab wontons, however the general idea is the same; fried wonton dough, filled with delicious crab, cream cheese and seasonings!

I was excited to have another opportunity to break out the deap frier I received for Christmas with these guys. I have a smaller deep fryer so I only placed 3 rangoons in the oil at a time while cooking. Be sure you have sealed the wonton wrappers well, or the excess filling will escape and cause your oil to bubble violently.

I used crab claw meat for this specific recipe, but feel free to use whatever you have on hand, or is on-sale at your local store! The sugar is important in this dish to give the rangoons the sweetness you taste in any restaurant variety. Pair with your favorite dipping sauce, and enjoy!

Italian Sausage Breakfast Braid

This is an incredibly easy and delicious idea for company. There are tons of variations and it stores pretty well if you have extra. I make this all the time and have a lot of success! Spice up your weekday or weekend with this easy crowd pleaser!

Ingredients

  • Pillsbury (or other) plain pizza crust
  • 4 Large Eggs
  • 1 Egg White
  • 1 cup of your favorite cheese (I used the Mexican blend)
  • 6 uncooked sausage links
  • 1/2 cup diced onions
  • 1/4 cup diced tomato
  • garlic clove salt & pepper

Cheesy Chicken Enchilada

chicken enchiladasI love Mexican food, and this recipe is fairly easy. I chose to make enchilada sauce from scratch, and I think it really made a difference. You could easily prepare the sauce in advance, and refrigerate until you were ready to bake the enchiladas.

These enchiladas had some heat, and I used low-fat cheese, to help make this a more healthy recipe. You can top this with some guacamole or sour cream and voila an easy weeknight dinner for the family!

Homemade Parker House Rolls

finishedparkerhouserollsFor Valentine’s Day, my husband and I went to a delicious new place in Richmond, Virginia – The Rouge Gentleman. While everything that we had there was delicious, the very first thing we had was their in house, made-to-order Parker House Rolls dusted with sea salt.

Their rolls arrived four to a small cast iron square with a side of butter, and I was transported to heaven. These fluffy, buttery clouds of edible deliciousness were obscenely good, and like the good foodie that I am, I decided I had to recreate these myself.

I wish I had a picture to compare and contrast my outcome, but you can let me know what you think. Mine are nowhere near as aesthetically pleasing, but they hit the mark on flavor. I do think I need to invest in some flaky sea salt to really tip these over the edge.

While these are obviously time consuming, given the 8+ hour of rise time, they are more than worth it, and might become my staple holiday and guilty pleasure dinner side.
