Crescent Roll Veggie Pizza

So you may or may not have seen some iteration of this easy crescent roll veggie pizza before. I realize that there are recipes for this out there, but when my mother-in-law first made this, I was obsessed. With its fairly easy preparation and your ability to substitute as many reduced-fat and light options as you want, this easy party appetizer is a sure win and a healthy alternative to some heavier party appetizers. Every time I have made this for work or other random gathering I am welcomed with, “I didn’t know what this was, but it is so good,” and after explaining its fairly easy construction, “Can you send me the recipe, I am going to make this for insert party“.

So for everyone who wanted to know instead of sending you an email, I will shamelessly redirect you to my blog.  Here you go . . .

Ingredients

  • 2 8oz containers of crescent rolls
  • 2 8oz cream cheese bars, with 1 cup of mayo
  • 1 packet of Ranch Dressing Seasoning Mix
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  •  several stalks of broccoli, finely chopped
  •  a handful of baby carrots, finely chopped
  • 1/4-1/2 cup shredded sharp cheddar cheese

Directions

  • Take the containers of crescent rolls and roll them out completely flat on a cookie sheet
  • Press the two sheets together as well as all of the perforations to make one uniform crust that won’t fall apart
  • Pop crescent roll crust into the oven according to the package directions.
  • While the crescent rolls are cooking, mix together the cream cheese, mayo and ranch packet, using a blender if necessary to create a smooth consistency. You can use more or less mayo to get your desire texture, I use exactly 1 cup, sometimes a bit less.
  • Once the crust has cooled completely (VERY IMPORTANT, you will thank me when you go to cut the pizza up) apply the cream cheese/ranch mixture evenly on top with a spatula.
  • Sprinkle pizza with finely chopped veggies, then cheese

Notes:

Feel free to adjust veggie types and amounts for your desired combination, I have had people only do a blend of different peppers, or just do broccoli and carrots. I have tried cucumbers as well.

I also don’t buy pre-shredded cheese, I shred my own. Likely any time I post shredded sharp cheddar cheese on my blog, I do it myself. I think it tastes better and has a less processed more robust quality to it.

    As you know, this is one of my absolute favorite party foods that you make! Every time you tell me you’re making veggie pizza for any gathering or party, I get SUPER excited! Then I usually end up hovering right next to the food table and stuffing my face with like 3 slices…but I don’t even have to feel too guilty about it since you usually make a reduced-fat version that tastes sooo delicious! My mouth is watering just thinking about it…
